American Baby sponge cake

A baby cake to bake when you want to make it for your child and their friends , a very basic sponge cake to make anytime and everytime you feel like having it.



Ingredients:
  • 1 Cup all purpose flour
  • 3 Eggs(Yolks and white separated)
  • 1 Tsp Baking powder
  • 1 tsp Baking soda
  • a pinch of salt
  • 1 Cup  granulated sugar
  • 3/4cup Oil
  • 1 tsp Vanilla extract
 Directions:
  1. Preheat the oven at 350 degrees F,Mix all the dry ingredients except sugar and sieve them.
  2. Now beat in the Egg whites and sugar till it reaches the stiff peaks stage with the help of electric mixer.
  3. Lightly whisk the Egg yolks n vanilla essence and the oil.
  4. Fold in the liquid ingredients and dry ones ,starting and ending with flour.
  5. Bake in the oven for 25-30 min, till the knife inserted comes out clean.
  6. Enjoy with icing or dusting with  sugar like i did.

3.How do you keep in touch with friends? :I keep in touch with my old friends thru Facebook which has given me a lot of lost friends back and calling  them occasionally, asVonage has made life in US more talkative with cheaper phone bills,and ofcourse blogging as it has given me a lot of new frens.
How do you feel when you get awards/tagged:.Awards ,it makes me very happy and motivated and help me know more about my fellow bloggers and make new friends.
5.How happy you will be when you get comments  for your recipes: Comments are the best way to appreciate and interact with other bloggers and your visitors ,otherwise its just a one way communication.These are the only rewards we get everytime apart from these precious awards.

Triple Chocolate Mousse Cake

Triple Chocolate Mousse Cake and that too eggless sounds like naaaaa...but its actually worth the effort .Its inspired from a variety of recipes with some changes as i made a Eggless version of it ,it actually turned out good as per my expectations.You gotta be a chocoholic to try this out ..if not u will become one after eating this yummy cake.









 Ingredients:
Chocolate Cake 

All purpose flour/Maida – 1/3 cup
Cocoa - 1/2 cup
Sugar – 1/3 cup
Baking powder – 1/4 tsp
Baking Soda – 1/8 tsp
Salt – a pinch
Vinegar- 1tbs
Milk-1cup
Oil – 1/3 cup
Vanilla essence – 1 tsp

Chocolate Mousse:

Dark Chocolate  (I hv used Ghiralidees  )
Butter – 1/2 cup
Whipping cream – 100 ml
Icing Sugar – 1/4 cup
Vanilla essence – 1 tsp

Chocolate Ganache:
Dark Chocolate – 1 cup
Heavy Cream-1/2 cup
Unsalted Butter-4oz
Vanilla extract – 1 tsp

For the Eggless Chocolate Cake Base:
  • Pre-heat the oven to 350°F.
  • Sift all the dry ingredients together (flour, cocoa, baking powder, baking soda, salt) thrice and transfer to a wide bowl
  • Add the sugar, stir well.
  • Combine the vinegar and mix well.
  • Add in the Milk and Oil to the dry mixture and stir with a whisk. The batter must have a ribbon-like consistency once properly combined.
  • Pour the batter into a round pan.
  • Bake for 20-22 minutes or till done.
Let it cool completely before you can proceed further.

For the Eggless Chocolate Mousse
  • Melt the chopped chocolate and butter together at high for 1.5-2 minutes in the Microwave or on a double boiler. Once done, remove from MW/double boiler and set aside to cool..
  • In the meanwhile, whip the whipping cream and icing sugar together for 2-3 minutes, till just before hard-peak stage.
  • By now, the chocolate-butter-cream mixture should have cooled down a bit. 
  • Once the chocolate mixture has cooled, put some of the whipped cream mixture into the chocolate mixture and fold it in gently to incorporate.
  • Gradually fold in the rest of the whipped cream into the chocolate mixture and incorporate.
For the Chocolate Ganache:

  • Heat the Cream and butter in a pan over medium heat,Bring just to a boil.
  • Now put the chocolate in the mixture and whisk untill smooth. 
  • Let it cool completely before use.

Assembling the Cake:
  • Place the base of the cake on a working base.
  • You can wrap a 4 inch tall parchment paper around the cake or use a spring form pan.
  • Poke holes on the cake base with a fork.
  • Pour the  prepared mousse onto the cake, and level the top with a spatula.
  • Set the cake in the fridge for 2-3 hours.

Once the cake has set for a good time in the refrigerator, and  the ganache has considerably cooled, spread it over top of cake , you can just drizzle over the sides or let it cover completely with it.


Decorate the cake with grated chocolate ,strawberries or just anything you love and indulge...

My First Chocolate Chip Muffin



I have made so many things during the past weeks , but somehow i was so busy  in parties and dinner outs and  vacation as it was my hubby's birthday  it kept me so busy .So gearing up and  back on my blog  with few more tried and made recipes.I have been inspired by so many fellow bloggers and love their work.I want to really improve on baking and though i keep making cakes since my childhood days and keep experimenting with icings but never mastered the art of baking , but i  promise will keep trying, learn and improvise on my baking skills and develop as a baker. So here is a basic and yet so loved recipe for the chocolate chip muffins.


Ingredients:
  • 2 cups all-purpose flour
  • 1/2 cup white granulated sugar
  • 2 teaspoons baking powder
  • 1tsp Salt
  • 1-2tsp Vanilla Extract
  • 3/4 cup milk
  • 1/3 cup vegetable oil or 1/2 cup melted butter
  • 2 eggs
  • 3/4 cup mini semi-sweet chocolate chips( i have used ghiradellis choc chips)
Method:
  1. Heat oven to 400 degrees F . Grease the bottoms of 12 cups muffin pan or line them with baking cups.
  2. In a medium bowl, combine flour,  sugar, baking powder, chocolate chips, and salt; mix well. In a small bowl, combine milk, oil and egg and vanilla extract, blend well with a whisk. 
  3. Add the wet ingredients in the dry ingredients  and mix well with the help of a spatuala,stir just until dry ingredients are moistened (batter will be lumpy.)Don't overdo the mixing process .
  4. Fill the muffin cups 2/3 full. 
  5. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.Serve warm.

Easy and Yummy Homemade Cake


Valentines Weekend and loads of plan ,Make it romantic ,sexy ,fun real and be in love...So wat can you do to make it special for your loved one what i did was Kenny G music, Candles all over and so i thought of making a Cake with whatever i had at home as i didn't have time to go n shop..searched some recipes and couldn't find one so discussed wth a fren and made it really easy ,practical and came out good ..I hope you will like to bake


Ingredients:
  • 2 Cups All purpose Flour
  • 1 1/2 Cup sugar
  • 1 Cup Vegetable Oil
  • 2 Large Eggs
  • 1tsp Baking Powder
  • 2 tsp Cocoa Powder/Coffee
  • 1 Tbs Vanilla Extract
  • 1/2 Cup Milk
  • 8-10 Almonds,Cashews, walnuts(Any nuts you love)
  • Yellow Food Colour
Method:
  • In a Mixing Bowl mix the flour and Baking powder ,or you can use a sieve to make sure its mixed nicely.
  • Then add sugar and eggs to the bowl ,Mix it thoroughly.
  • Add the Vanilla extract .
  • Now add the milk to the batter and mix it with hand .
  • You can use a electric mix or Regular Mixer/blender to give it a good stir.
  • Now add the nuts to it .
  • To half of the mix add Cocoa powder and to the remaing half add yellow colour.
  • Grease and flour a 9 inch round/square pan.
  • Pour the Cocoa batter and the yellow batter to the pan.
  • Using a knife, swirl the cocoa batter into the yellow batter to incorporate it in a marble effect.
  • Bake in preheated oven at 350 degrees for 30 to 35 minutes, until a inserted knife comes out clean.
Just drop in some chocolate chips if you have on top or grate a chocolate on top of the batter before putting it in oven to add the special effect.I didn't have time for icing so used some M&m's.Be as much creative as u can..enJOY :)
