Pizza Puffs

When Pizza and muffins come together this is the end result, all the pizza lovers and muffin maker must try these ..pizza puffs...use the ingredients of pizza and bake in t he muffin tray and we get Pizza puffs rather Pizza muffs.It doesn't looks like pizza , but definitely tastes good and a healthy option to feed your kids with Vegetables and cheese and the left overs are of course for you...So check out what you will need.
Ingredients: 
  • 3/4 cup flour
  • 3/4 tsp Baking Powder
  • 3/4 cup Milk
  • 1 Egg
  • 1 tbs Oregano/Italian seasoning
  • 1tsp Crushed Red pepper
  • 1 Cup shredded Mozzarella Cheese
  • 1 Cup Chopped Green Pepper, Mushrooms,Red Onions.
  • Salt to taste
  • Pizza Sauce (homemade or ready made)

Directions:
  • Preheat the oven to 350 degrees.
  • Mix together flour, baking powder ,milk ,egg and give it a good whisk.
  • Add in the Oregano and crushes Red pepper .
  • Add the chopped Veggies in it and mix well.
  • Set it aside for 10 minutes.
  • Spray or Lightly grease the muffin pan.
  • Pour in the mixture in the pan and let it bake for 20-30 minutes.
  • Serve it with warm Pizza sauce or any dip of your choice.

Baingan-e-bahar( Stuffed Eggplant with tomatoes n Yogurt Sauce)

Eggplant  is so popular among the world and easily available and gives you so much room for experimenting.It is exotic in taste and texture, and can be prepared in a variety of different ways including steaming, sauteing, oven roasting, broiling, and grilling.So i thought of experimenting and made this dish which  every1 liked ..my friends just kept saying wow the dinner was amazing..this dish actually ruled my dinner table this time...i am actually loving it .This is inspired from Chef Pankaj ka Jayka show and tried and tasted with a little variation of my own.

Ingredients: Serves 2-3

  • 1 Eggplant Sliced into 1 inches thick circles
  • 2 Potatoes Boiled and mashed
  • 1 cup Fresh cottage cheese (Paneer )Crumbled
  • 1 tsp sesame seeds
  • 2-3 tomatoes chopped
  • 1 onion chopped
  • 1 tbs mustard seeds
  • 1 tsp chilli powder
  • 10-12 Raisins
  • 2tbs All purpose flour
  • 1 cup curd
  • 1 tbs garlic minced
  • 1 tbs Sugar
  • Salt to taste
Directions:
  1. Cut the eggplant into thin circles abt 1" thick and hollow them from within.
  2. Now sprinkle some salt and chilli powder on it and keep it in aside for 2 minutes.
  3. Now prepare the stuffing for the eggplant by mixing mashed potatoes, crumble paneer ,salt,pepper and chilli powder and add some sesame seeds.
  4. Fill in the eggplant circles with the stuffing and dust them with all purpose flour from both sides.
  5. Now shallow fry them on medium heat while changing sides.

For Chutney:

  1. Heat oil in a pan on medium heat and add mustard seeds.
  2. Add in the chopped onions and saute them ,then add the tomatoes.
  3. Now add the salt and paprika powder to it .
  4. Add in the sugar and some raisins to it and its ready.
Garlic Yogurt:
  1. Heat Oil in a pan on medium heat and add cumin seeds .
  2. Add garlic to it saute it a  little and then add salt.
  3. Pour  this over the whisked yogurt.
 Now  its time for serving , serve it hot with chutney and topped with Garlic Yogurt.You can serve it with chapatis or as a snack too.

Veggie Delight Idli



15th August,India's Independence day and as we celebrate the 65th year of our independence we once again salute to all those great leaders who gifted us this day.So m celebrating this day while making some colorful things this week . Starting with idlis..Idli is a very special part of the meal of people who live in the southern India.It is made of rice or suji. Idli tastes great with sambhar and coconut chutney but the best part about idli is its a great snack too and can be altered in a number of ways .You can actually get real creative with it .


Ingredients:
  • 1 Cup Suji/Rawa/Semolina
  • 1/4 cup Yoghurt/curd
  • 1tsp ENO Fruit salt(you can get it in any Indian store)
  • Salt to taste
  • 1-2 carrots grated
  • 1 Green pepper chopped
For tempering:
  • 1Tbs Mustard seeds
  • 1-2 Tbs Oil
  • 1/2 cup cabbage finely chopped
  • 1 onion thinly sliced
Method:

  1. Mix Suji  and yoghurt in a bowl nicely and divide it into two equal portions in separate bowls.
  2. In the 1st bowl add grated carrots , salt and  orange food color and mix well.
  3. In the 2nd bowl add chopped green pepper, salt , green chutney or green color and mix well.
  4. Now Add the Eno fruit salt in the batter only when you are ready to steam them one after the another.
  5. Grease the idli stand so that the idli doesn't stick when you take them out.
  6. Pour a ladle full of batter into idli plates and steam cook them for 15-20 minutes till they are done.
  7. You can check if they are done by inserting a knife and if it comes out clean, its done.
  8. Now rest them for 2 minutes and then take them out and cut into two halves.
  9. You can proceed similarly and cook both the batters.
For Tempering:

  1. Heat oil in  a pan on medium heat and add mustard seeds.
  2. When it splutters add some curry leaves.
  3. Now add the onions and fry it lightly and then add cabbage to it .
  4.  Add salt and chilli powder if desired.Don't forget that you have already added some salt to the idli's so be careful.
  5. You can add the idli's to it now, stir them for a min.
  6. And your Idli Tikka is ready for a bite.

Corn Fritters

Being an Indian and a food lover what can u think when it rains,Bad weather..hmm ..Romance..;) ;) hehehe but for me and i think a lot of you like me ..nothing could beat Pakoras and Chai..Wow so this urge for pakoras made me to fry some pakoras and i thought of making these corn fritters.Its real easy and very tasty, u can easily use the corn kernels without the need to scrape corn or if it is not easily available u can actually scrape the corn which is easily available everywhere.








 Ingredients:
  • 1cup corn kernels(frozen/fresh)
  • 5-6  garlic cloves minced
  • 1-2 green chillies, finally chopped
  • 1 smalll onion chopped
  • Cilantro leaves chopped
  • 1/2 cup besan(gram flour)
  • salt to taste
  • Chilli powder
  • 2tsp Kitchen king masala or any chat masala
Method:
  1. To make the paste, combine all ingredients in a medium bowl. Set aside.
  2. Grind corn kernels coarsely  in a food processor or blender or Scrape corn into a large mixing bowl add in the paste and mix well.
  3. In a large, heavy frying pan, heat oil over medium-high heat. 
  4. To make a fritter, use a large mixing spoon to carefully drop 2 tbsp. of batter into the pan. Fry fritter for 2 to 4 minutes, or until it turns golden brown. You may make up to four fritters at a time. 
  5. When they are done, use a spatula to transfer them to a plate covered with a paper towel. Serve hot with  Green chutney or saunth or any of your favourite dips.
Tip: If you like them real crispy try the double fried version,after frying you can press them on a paper towel drain out the excess oil and fry them again, they come out real crisp.

Eggplant Parmigiana

I tried this dish @Olive Garden and absolutely loved it so thought of making it at home ,i was never so creative with Eggplant, as thinking of raw eggplant(Brinjal) in a sub made me feel yucky but this is a really wonderful Italian dish and i did a little desi version of it so it can fit in our kind of food.You can serve it for a snack or for a meal.


Ingredients: Serve 2- 3 ppl
  • 1Eggplant (The really big ones)
  • All purpose flour
  • 2 Eggs
  • 2-3 Bread Slices
  • Marinara Sauce/Salsa or Tomato sauce made at home
  • Mozzarella Cheese
  • Oregano(Italian herb)
  • Red Chilli Flakes
  • Black Pepper
  • Salt to taste
Method:
  • Wash and Peel the skin of the eggplant and cut it into thin round slices.
  • Take a bowl beat the eggs in it a little.
  • In a blender ,turn the bread slices into bread crumbs and add the spices into the bread crumbs.
  • Dust the eggplant with flour and Dip into the egg and then wrap them in the bread crumbs mixture
  • Heat the Oil in a skillet and fry them really well, or u can bake them on a cookie sheet instead .( i prefer frying them as eggplant that too raw scares me a little)
  • Now preheat the oven to 350 degrees
  • Layer a baking pan with Marinara /Salsa/Tomato sauce and Eggplant and cover it up with Mozzarella cheese ,Repeat with remaining ingredients, ending with the cheeses.
  • Bake it for 30 Minutes
  • Serve it Hot with Noodles or Chapati
You can get the Marinara sauce in any Grocery stores or you can make it at home(Will soon post the recipe), for those who don't eat Eggs you can avoid it and just dissolve the flour in little water ,dip the eggplants and then wrap in bread crumbs and the rest is same.Believe me give it a try you gonna start liking eggplant.
