Ingredients: Serves 2-3
- 1 Eggplant Sliced into 1 inches thick circles
- 2 Potatoes Boiled and mashed
- 1 cup Fresh cottage cheese (Paneer )Crumbled
- 1 tsp sesame seeds
- 2-3 tomatoes chopped
- 1 onion chopped
- 1 tbs mustard seeds
- 1 tsp chilli powder
- 10-12 Raisins
- 2tbs All purpose flour
- 1 cup curd
- 1 tbs garlic minced
- 1 tbs Sugar
- Salt to taste
Directions:
- Cut the eggplant into thin circles abt 1" thick and hollow them from within.
- Now sprinkle some salt and chilli powder on it and keep it in aside for 2 minutes.
- Now prepare the stuffing for the eggplant by mixing mashed potatoes, crumble paneer ,salt,pepper and chilli powder and add some sesame seeds.
- Fill in the eggplant circles with the stuffing and dust them with all purpose flour from both sides.
- Now shallow fry them on medium heat while changing sides.

- Heat oil in a pan on medium heat and add mustard seeds.
- Add in the chopped onions and saute them ,then add the tomatoes.
- Now add the salt and paprika powder to it .
- Add in the sugar and some raisins to it and its ready.
Garlic Yogurt:
- Heat Oil in a pan on medium heat and add cumin seeds .
- Add garlic to it saute it a little and then add salt.
- Pour this over the whisked yogurt.
