Baingan-e-bahar( Stuffed Eggplant with tomatoes n Yogurt Sauce)

Eggplant  is so popular among the world and easily available and gives you so much room for experimenting.It is exotic in taste and texture, and can be prepared in a variety of different ways including steaming, sauteing, oven roasting, broiling, and grilling.So i thought of experimenting and made this dish which  every1 liked ..my friends just kept saying wow the dinner was amazing..this dish actually ruled my dinner table this time...i am actually loving it .This is inspired from Chef Pankaj ka Jayka show and tried and tasted with a little variation of my own.

Ingredients: Serves 2-3

  • 1 Eggplant Sliced into 1 inches thick circles
  • 2 Potatoes Boiled and mashed
  • 1 cup Fresh cottage cheese (Paneer )Crumbled
  • 1 tsp sesame seeds
  • 2-3 tomatoes chopped
  • 1 onion chopped
  • 1 tbs mustard seeds
  • 1 tsp chilli powder
  • 10-12 Raisins
  • 2tbs All purpose flour
  • 1 cup curd
  • 1 tbs garlic minced
  • 1 tbs Sugar
  • Salt to taste
Directions:
  1. Cut the eggplant into thin circles abt 1" thick and hollow them from within.
  2. Now sprinkle some salt and chilli powder on it and keep it in aside for 2 minutes.
  3. Now prepare the stuffing for the eggplant by mixing mashed potatoes, crumble paneer ,salt,pepper and chilli powder and add some sesame seeds.
  4. Fill in the eggplant circles with the stuffing and dust them with all purpose flour from both sides.
  5. Now shallow fry them on medium heat while changing sides.

For Chutney:

  1. Heat oil in a pan on medium heat and add mustard seeds.
  2. Add in the chopped onions and saute them ,then add the tomatoes.
  3. Now add the salt and paprika powder to it .
  4. Add in the sugar and some raisins to it and its ready.
Garlic Yogurt:
  1. Heat Oil in a pan on medium heat and add cumin seeds .
  2. Add garlic to it saute it a  little and then add salt.
  3. Pour  this over the whisked yogurt.
 Now  its time for serving , serve it hot with chutney and topped with Garlic Yogurt.You can serve it with chapatis or as a snack too.
